The name "KOUSUI" (志翠) derives from '志', part of chef's name, and the Zen term '翠', signifying evergreen pine that retains its verdure through a thousand years.
Unfading through snow, wind, and the passing of seasons, this color symbolizes "the unchanging essence" in Zen philosophy.
After years of training in Kyoto, followed by the opening of our first restaurant in our hometown (Shizuoka), and we now move forward toward an even higher pursuit in Ginza.
Kaiseki cuisine is one of Japan's most profound culinary traditions, refined through centuries of dedication.
While honoring its timeless spirit, we continue to move forward—quietly, steadily, and with the seasons.
To preserve what is eternal, we must continue to evolve. This belief is embodied in the name "KOUSUI".
From Ginza to the world, we share not only Japanese kaiseki cuisine, but also its spirit of harmony and mindfulness.
